About the green coffee
The green coffee is decaffeinated directly in Colombia, on the cooperative's farm. To do this, the green coffee is exposed to steam, which enlarges the beans and opens the pores of the coffee. The beans are then placed in an ethyl acetate liquid made from sugar cane. This liquid extracts the caffeine from the green coffee. At the end of the process and several repetitions, a decaffeinated green coffee remains, which we then gently roast.
